1. If the trailer has an air conditioner on the roof, then it should be wired for 30 amp service using a proper 30 amp cable and connector. There should be a separate 15 amp breaker for the A/C and one or more breakers for the rest of the trailer. If there is no A/C and you don't plan to add one, it would be safe to install a 20 amp shoreline to replace whatever is currently there. I am not a fan of inline splicing. These shorelines lay on the ground in all kinds of weather. A splice, no matter how well you think it's insulated, will deteriorate and eventually leak.
2. Find a Dometic refrigerator catalog. Taking the measurements of the fridge opening in your trailer, you should be able to find one or more models that will be a proper fit. These days, most rigs have fridges that run on both propane and 110vac. They're not cheap if buying new. If you hunt around, you may find someone selling a used one.
If you truly do not ever plan on camping away from 110vac sources, you might find a mini fridge that will fit.
