Hmm, my guess is maybe the switch is dirty inside or something and it's causing it to keep igniting even though the plastic part comes back out?

I looked up a manual for your RM2510. I do not know that older model exactly however it shows the some what standard Dometic electric igniter.
If this is the case, then the clicking that keeps happening points to the flame sense feedback is not working right.
Does your igniter look anything like this?
If so then the constant sparking is pointing towards the flame sense in the electrode not working right.
Constant sparking when the flame is burning points to the flame sense circuit not working right.
Are you handy with electricity and do you have a VOM meter?
Hope this helps
John
PS. Adding some more, the flame sense that shuts down the igniter is in actual electrode. Once the electrode get's hot it sends a very small voltage back to the igniter unit and stops the sparking.
The electrode may not be in the flame enough or the cable is bad. This is the setup on the newer electrodes. The RM 2510 book shows the same gap setup. And the electrode needs to be in the flame. Be care full to not tweak the electrode to much as you can crack the insulator

Which "lamp" keeps blinking? And what button are you pressing?

John, this model should only have one button:
I don't have a picture of the front, but I have one of the top looking down. I believe the little yellow light was to the left of the ignition button, IIRC.
The two dials you see on the right just rotated. The far right one was off, gas, or electric, and then the middle one was just numbered 1-like 7. Can't remember which it was.

Finaldetail, Question, you say you push the button, the fridge lights and the lamp keeps blinking. I'm assuming this is after you have released the button?
From digging tonight the blinking like is most likely coming from the unit will sparking. I believe the light blink is tied to the power of the ignition, you get a pulse of power with each spark to make the light blink and it lets you know spark was made.
If what I am saying seems to fit, then this still points to the electrode itself not getting hot and sending the millivolt signal back through the cable to shut down the igniter. Or the cable/electrode is bad.
Hope this helps
John
