Question Taking out a Dinette

I found this nice looking T-2570 but it has a dinette and I don't like dinettes

Could this be taken out? Are there any vents etc underneath?

Not easily, not without damaging the walls. Under part of the dinette will be the wheel well box too, so the floor space gained won't be the whole area. I suspect there's an LP leak detector wired in there somewhere as well. You'd have holes in the floor too. Sure, they can be removed, but they usually need reconstruction after.
