Que side entry bed reconfiguration

Want to tear out weird bed configuration so it can be left "made up" and still have easy access in and out of door. Appears to be enough space to install new dinette/double bed across whole front of trailer, has anyone done similar? Any pics would be helpful!

We use a smaller version of just the long pads and never put the bed up. I made a plywood base with hinge to fold back. I screw the plywood with removable screws so it does not move. We also did new faucets, 4 jacks to level. Unfortunately, we are selling! We used our Que all the time.
