Pop Pop’s Chili

2 lb. Ground Beef or Ground Chuck.
2 tablespoon Chili power – more or less as desired, hot/mild as desired.
2 teaspoons salt
1 teaspoon sugar – optional
1-½ cups chopped onion
½ cup minced green pepper
1 chopped jalapeño - optional
2 - 15 oz cans Tomato Sauce
1-cup water
1 clove garlic – 2 if desired - finely chopped.
1 can small red beans or chili beans with sauce (preferable)* – hot or mild to suit. Add entire can, do not drain.

Cook meat in kettle until brown, drain water and grease.
Stir in chili powder, salt, sugar. Blend well through meat.
Add onion, garlic and green pepper and water - continue cooking.
Stir occasionally until vegetables soften.

Add Tomato sauce. Simmer 1 hour covered stirring occasionally.

Add beans and simmer ½ to 1 hour.

Taste test while simmering and add additional chili powder as desired.

Makes about 2 ½ quarts of tasty, colorful chili. May make more by proportionally increasing amount of all ingredients. Add or reduce ingredients to suit your taste.

Serve with sprinkle of grated sharp chedder cheese and/or chopped onion.

*Chili beans with sauce are available in various degrees mild to really hot.
