Pex is pretty reliable these days, but if you want, use the pex with flair-it fittings. Best of both worlds. It's what I would look at first.

It's all pretty standard plumbing parts. The pex tubing and fittings are readily available at Home Depot, etc. That access panel on the wall should come right off.
