Alternative to s'mores

I was watching the grands make s'mores and thought about a variation. Use good, artisan oatmeal cookies in place of the graham crackers and omit the chocolate.
Penny suggested heating the cookies on the fire then using creamed cheese and a marmalade for a filler.

Reading this as I'm eating a Italian grinder with horse radish on it thinging "Hmmmmm..."

Maybe, maybe not.

The oatmeal cookie with raisins replaced with dates would be about as adventurous as I would go myself. I would eat your cream cheese and marmalade if offered to me.....but then I would do THAT with most any food item!

What's a "grinder"? Is it similar to a sub sandwich?

A grinder is similar to a "hoagy".

A "hoagy" is similar to a "sub".

Last but not least, a "sub" is similar to a grinder. In that order!

Mmm, Penny's idea sounds good (as long as the cookies don't have raisins).
