Water Heater Pex Valve

My wife and I recently purchased a 2001 Sunline Solaris T260SR. Within a month we were notified that our camper was hemeraging water. Turns out the pex valve broke (we now know to turn off the water....hard lesson learned) now I need to replace the pex valve. I think I have the part. The valve was installed into the bottom of the water heater with one end going to cold water and the other going to hot water. I am pretty sure this is a bypass valve for winterizing. I have gotten the valve out of the hoses but I CANNOT get it out of the water heater. As icing on the cake, it broke off and there's just a little knub going into the water heater. I'm at a loss here. How do I get this valve out? How do I get the new one in? The valve I have had the 3 flanged parts with a screw on cuff on each. I suspect the part going into the water heater may be a different kind of connection. But I'm not sure. I need to fix this soon so I can Winterize my camper. Thanks in advance.

I've taken out a plastic fitting before using an ez out extractor. I've also had a drain plug break off and got it out by heating it with my propane torch until it was soft enough to peel it out with a small metal pick.

That's a good idea. Would a heat gun work?
