Quite a few of us have ditched the standard RV thermostats in favor of digitals of one kind or another. Even the very inexpensive digital thermostats have extremely tight set points.
There are a lot of instructions out on the net to be found on a google search, but right in the Files area here on SOC are instructions on installing a Hunter brand digital thermostat. There are also several threads going back a few years on the topic with lots of good tips and details. Here's a link to the file that I put up here two years ago:

The Hunter is very popular because it is very inexpensive, found in WalMarts everywhere, and extremely easy to adapt for RV use.
