Bed/Bunkbed modification help!!

I am new to this and new to computers too for that matter! We have a Saturn 2160. Had it about 2 years now and absolutely love it!
Prior owners were great caretakers of her.
The layout is with the optional front couch instead of a dinette and that fits our needs real well. It allows for an open floor area and since we camp with 3 large dogs it is needed! With that said, opening this bed up at night it not a viable option for us and the rv size 'full' bed is not very comfy for the wife and I together. I love her but after 22 years of marriage we both want a comfy place to sleep and together on that small bed is not the answer!
I was considering replacing the bed with a custom bunkbed in the same location. This would open the floor space in front of the bathroom up a bit and allow individual sleeping space.
We would need to remove the overhead storage and then remove the original bed and start new. What I am not too sure about is the 'how part of building in the camper.
We are very handy and my wife can build just about anything she wants but how do we build bunks that are stable, secure and have the proper weight capacity while at the same time accounting for the weight of the item and distribution of the weight? The bed would all be on the one side above the water holding tank.
I already looked at the metal folding store bought ones and I believe they are too tall. Plus my wife would like to take on the challenge.
Any thoughts would be appreciated.
