Lite Summer Strawberry Pie....

Folks......

You can easily do this one at your campsite....


SUMMER LITE STRAWBERRY PIE


You need:
  • (2) cups sliced fresh strawberries.
  • (1) 6 oz. Low fat graham cracker piecrust
  • (1) 4 - serving package JELL-O sugar-free strawberry gelatin
  • (1) 4 – serving package JELL-O sugar-free vanilla instant pudding mix
  • 1 ½ cups water
  • 1 container Cool Whip Lite
To prepare:

(a) In a medium saucepan, combine the dry gelatin, dry pudding mix, and 1 ½ cups of water. Cook over medium heat, stirring constantly, until mixture thickens and starts to boil. Remove from the heat.

(b) Place the sliced strawberries in the piecrust.

(c) Spoon the hot mixture (a) evenly over the strawberries. Refrigerate for at least 2.5 hours.

(d) Spread the Cool Whip over the (c) filling in the crust.

(e) Refrigerate for at least 20 minutes or ‘till ready to serve. Cut into 8 servings.

Best if eaten within 36 hours of preparation (this will NOT be a problem!).

We made the strawberry pie this weekend. Everyone loved it and it did disppear. It was very lite and not bitterly sweet as many desserts are.

We used a nine inch pie shell, increased the strawberries, used two vanilla instant puddings, and 2 1/4 cups of water.

I should have said we used two vanilla instant puddings and one strawberry gelatin.
