Lots of detailed info here and out on the net. Basically, crud accumulates on the probes, stopping them from reading proper levels. Industry-wide problem not limited by brand.
The solution is to clean the tanks. This can be done with chemical additives in the gray water tank or just proper rinsing every time. The black water tanks have some more options if you repeatedly fill and rinse the tank it will eventually clean it up. They sell a wind attachment for the end of a garden hose that will put a high-pressure spray on the walls of the black tank. You can also dump a couple of bags of ice in the tank along with a couple gallons of real cold water and take the trailer for a trip. Before the ice melts the pounding action on the walls of the tank will help clean it.
